Okay so yesterday I was craving some comfort food, mainly my Daddy's fried potatoes that he usually mixes onion or okra (if I'm lucky, sometimes both!) into. Well, I didn't have onion or okra (sad day), but I made it work anyways.
I just poured some Canola oil into the frying pan and let it heat up while Chris (God bless him) peeled and cut up a couple of little potatoes (normal potatoes...I do have a little addiction to red potatoes, but I used regular potatoes because that's how Daddy does it lol). After the potatoes had spent a decent amount of time getting cooked, I threw in about half a pound of that pre-cooked smoked sausage and let that simmer and get nice and tasty. Salt and pepper to your own taste, but Chris likes pepper so I added more pepper than I did salt.
We also cooked some white rice (I know, Nana, brown is better, but I only had white). We put the potatoes and sausage on top of the rice and it made a very yummy lunch.
Maybe this wife thing won't be too hard after all.
